Been Too Long Without Posts

Here it is 8 months later since my last post.
We are happy to announce that Larry & Amy will have child # 11 this month of Oct.
Gives us a lot of grandkids to keep up with. Anyone like to share our christmas bills? just kidding

The garden this year didn't do so hot. Funny weather, rain wasn't falling right and had to use a lot of city water. Too many minerals and other stuff in that water to really do good. Tomatos was attacked by some bug that ate into them as soon as they were close to ripe. Other words, we didn't get many to keep.
Now cucumbers are a another completely different story.
I grew pickling cucumbers and I made 54 quarts and 15 pints of dill pickles.
I also added Dill in the garden this year as so did Don my son.
He also made lots of dill pickles this year again.
Retirement isn't as great as a person thinks it is. Being disabled and on a tight budget makes you watch things close.
Linda's crafts and card making are going great. Linda keeps adding things to the craft room she has. Linda took one bedroom and changed it completely into crafts and supplies.

I haven't added anymore crocheting as I haven't done any. Lots of blankets out all over the USA.

These are pictures of a flower someone gave Linda. It looks like a little tree but the flowers are really pretty. Big yellow and the inside is deep red which turns to pink and then to yellow. Anyone have a clue of the name of this flower we would really like to know. Thanks for visiting our site.

This is Thomas the oldest grandson holding his youngest brother Adam.
Adam is growing like a weed and teething. He already has 6 teeth at the age of 6 months.
Linda and I have lots of grand kids to spoil. Problem is most are too far to see very often.

This is a military jeep like with a machine gun mounted on the top.
There was a parade in Fargo and this was part of it.

Well, here is a real oldie. This is when Larry Allen was first born but not out with us in the back yard. I just thought Larry would like to see his mother from about 1972! Notice how I stay out of the pictures ?
There are three pictures here, my brother and his wife at the time from California was visiting. Also my other brother from this area.
Lets see if Larry Allen can guess who is who on these.
I might even tell him if he is right! LOL

V I P's=====Very Important Parents

I well try to put into words some of my thoughts on this.
I am not a writer so I do make mistakes and sometimes I get ahead of my typing.

I think VIPs in my thoughts mean Very Important Parents.
Parents start shaping a child's personality and believes.
Strong religions believes, love of family, friends and country.
Respect seems to get lost in these trying times and I think the government gets in the way of parents raising their children in that respect.
The government seems to think a spanking is abuse but I believe they are wrong.
There is a big difference between a spanking and abuse. I do believe some people, not just parents go beyond a simple spanking and that should not be allowed. These are the people that needs to be punished for their actions.

Children are our future that will shape the coming generations and the world.
The way they are raised will influence how they live their lives and raise their children.

Now, if I made mistakes, let me know. I know what I want to say but sometimes it comes out wrong.

More Ice Cream

Here we go again. Another Ice Cream I found online. Anyone trying these?

Rich White Chocolate Ice Cream

Ingredients:

4 Egg Yolks
1/2 Pint (250ml) Fresh Milk
1/2 Pint (250ml) Double/Heavy Cream
3 oz (75g) Caster Sugar
2 Teaspoons Vanilla Extract (or according to taste)
9 oz (250g) White Chocolate

First carefully chop the white chocolate into small pieces and put to one side in 2 separate but equal portions.

Next make the custard base - pour the milk into a saucepan and bring to pan slowly up to boiling point.

In a bowl, beat and mix together the egg yolks and sugar until thick.
Pour the hot (but not boiled) milk into the mixture of egg yolks and sugar whilst stirring.

Pour the mixture back into the pan and heat gently, stirring until the custard thickens - DO NOT BRING TO BOIL OR IT WILL PROBABLY CURDLE. When you can see a film form over the back of your spoon its time to remove the saucepan from the heat. Stir in the vanilla extract and 1 portion of the chopped chocolate pieces. Keep stirring until all the chocolate is melted. Leave to cool.

When fully cooled, stir in the cream.

Transfer the whole mixture into an ice cream maker and freeze according to the manufacturer's instructions. About 5 minutes before the end of the freezing cycle add the remaining chocolate pieces.

Anyone know what Caster Suger is ? I never heard of it!

Someone let me know if this is good if you happen to try it.
It sounds good to me but, who really needs chocolate? All of us! LOL

Homemade Ice Cream
Blueberry Yogurt Ice Cream Recipe

Ingredients
1/2 pint (250ml) double (heavy) cream
1lb (450-500g carton) of natural yogurt
1lb (450) blueberries (rinsed clean) who didn't know that!
9oz (250g) caster sugar
4 tablespoons of cassis

Place the caster sugar and blueberries together in a saucepan, stir in 250 ml
(8fl oz) of cold water and bring to a boil. Simmer about 10 to 12 minutes.
When blueberries are tender remove the pan from the heat.
Take out approx 1/4 of the blueberries from the pan and put to one side to cool and use later.
Using a food processor or blender, take the remaining mixture from the pan and blend it with cassis, then pour into a bowl and allow to cool. Whip the double (heavy) cream and fold it into the bowl blended mixture along with the yohurt and berries which were placed to one side earlier. Transfer the complete mixture into and ice cream maker and follow manufacturer's instructions.

Home Made Ice Cream
Coconut Ice Cream Recipe

Ingredients:

1 Cup double (heavy) cream
1/2 Cup milk
1/2 Cup coconut flakes (packed down)
8oz (200g) can of sweetened coconut cream

Take the milk and coconut cream and blend in a food processor.
When smooth, carefully stir in the cream and coconut flakes.
Transfer the complete mixture into a Ice Cream Maker and follow
manufacturer's instructions.

Today, March 8, 2008 our little angel Alivia goes home from the hospital to join the rest of the family.

Here is a little Poem about North Dakota.
I think most will agree with it !!

Here is our newest grand-daughter, Alivia Lyla Elizabeth.
Proud parents are Mike and Audrey.
This picture is of her about 3 days old.
She was taken C Section 6 1/2 weeks early and weighed 3 lbs.
Also in the picture is Mike (the father) (big sister) Mary and Alivia.
As you notice Alivia is very small. Good start even though small, she didn't need O2 or life support.

6th Anniversary

Wow! We have made it 6 years as a married couple. We have been richley blessed to have found each other. In the time we have been together we have added two daughter-in-laws,
7 grandchildren with two on the way. After the two new babies are born, we will have a total of 15 grandchildern. WOW, god has sure blessed us with childern in our lives. We have also added a four legged member to our household. We still consider each other to be our best friends and we enjoy doing things together.

Fishing Contest

Guess who won the contest for catching the smallest fish??? Linda of course. Here she is with her prize winning "baby sunfish". On July 4th we were fishing again and this time as you can see I took the smallest fish away from Linda. Her's is a Sunfish and mine is a Perch.
Its great being with Linda and all the fun times we share.

Here Treyton awaits for the big one to bite. He didn't get a big one but caught a few small sunfish and was really excited. Its alot of fun watching him and others get their first fish.

Kids are great to take fishing and the enjoyment of their fun is worth more than any amount of money can buy!!!!

Roxie is a fun child. Loves fishing, driving the pontoon, special Olympics where she into track and into softball. She is also busy with her job and lives with 3 other young people in their own house staffed 24 hours aday.

Larry & Amy Pederson have been married for over 15 years now and have been blessed with 9 children. They are in order: Ellie-14, Thomas-14, Brian-12, Maria-10, Nicholas-9, Matthew-7, Joseph-5, Sabrina-3 1/2 and Ruth-18 months. Just of late I was informed of number 10 due in November.

Thanks to God's help, they have a wonderful and healthy family.
